Together they create a special, rich and original dish, which is also ideal for Christmas lunches and dinners.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The idea comes from our <\/span><a href=\"https:\/\/blog.termetritone.it\/en\/hotel-life\/talking-with-massimo-chef-at-the-hotel-tritone\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Chef Massimo<\/span><\/a><span style=\"font-weight: 400;\"> who, as always, draws on his many years of experience to express his creativity and create unique delights that have never been tried before.<\/span><\/p>\n<h3><b>TOASTED SESAME TUNA TATAKI, MARINATED LATE HARVEST RADICCHIO AND THYME-FLAVOURED CREAMED PUMPKIN<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Ingredients:<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">400 g tuna<\/span><\/li>\n<li><span style=\"font-weight: 400;\">100 g toasted sesame seeds<\/span><\/li>\n<li><span style=\"font-weight: 400;\">one tablespoon mustard<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">For the creamed pumpkin:<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">100 g leek<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 kg pumpkin<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 sprig of thyme<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Vegetable broth<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">For the marinated radicchio:<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">500 g late radicchio<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1,300 g water<\/span><\/li>\n<li><span style=\"font-weight: 400;\">700 g vinegar<\/span><\/li>\n<li><span style=\"font-weight: 400;\">30 g salt<\/span><\/li>\n<li><span style=\"font-weight: 400;\">30 g sugar\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">100 g olive oil<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-15586 size-large\" src=\"https:\/\/blog.termetritone.it\/wp-content\/uploads\/2024\/12\/7-4-1024x576.jpg\" alt=\"\" width=\"800\" height=\"450\" srcset=\"https:\/\/blog.termetritone.it\/wp-content\/uploads\/2024\/12\/7-4-1024x576.jpg 1024w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2024\/12\/7-4-300x169.jpg 300w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2024\/12\/7-4-768x432.jpg 768w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2024\/12\/7-4-1536x864.jpg 1536w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2024\/12\/7-4-570x321.jpg 570w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2024\/12\/7-4.jpg 1920w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">How to prepare:<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Peel the pumpkin and cut it into large pieces.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In a pan, brown the leek with a drop of olive oil, drizzle with the stock and stew for half an hour. Afterwards, blend until smooth and frothy.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Meanwhile, cut the radicchio into wedges and cook in a mixture of water, vinegar, salt, oil and sugar for 2-3 minutes. Drain and leave to cool covered in oil.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Cut the tuna into a cube, brush it lightly with mustard and coat it with sesame seeds.
