The crunchiness of meringue combines with the sweetness of whipped cream and the intense flavour of fresh raspberries.<\/p>\n<p>This <strong>meringue with a raspberry heart<\/strong> is ideal to end a special lunch or to treat yourself to a sweet and mouth-watering break on hot days.<\/p>\n<p>It is a creation of our Chef P\u00e2tissier Federico, who, with care and passion, creates elegant and richly flavoured desserts designed to surprise and give a moment of genuine pleasure.<\/p>\n<h3>MERINGUE WITH A RASPBERRY HEART<\/h3>\n<h3>Ingredients:<\/h3>\n<ul>\n<li>200 g fresh egg white<\/li>\n<li>400 g caster sugar<\/li>\n<li>250 g fresh cream<\/li>\n<li>1 natural vanilla pod<\/li>\n<li>30 g caster sugar<\/li>\n<li>fresh raspberries<\/li>\n<li>white chocolate for decoration<\/li>\n<\/ul>\n<h3>How to prepare<\/h3>\n<p>Combine the egg whites and sugar in a bowl, mix by hand and heat in the microwave until it reaches 60\u00b0C. Transfer to a stand mixer and beat for about 30 minutes (or beat with an electric mixer for 30 minutes), until the mixture is shiny, firm and well aerated.<\/p>\n<p>With the help of a piping bag, form cones in the silicone moulds. Bake in a static oven at 84\u00b0C overnight. Allow to cool.<br \/>\nWhip the cream with sugar and vanilla.
