The sweetness of the pumpkin, the scent of thyme and the unmistakable aroma of porcini mushrooms evokes the memories of the season, of walks in the woods and warm moments around the table. The Hotel Tritone is celebrating the essence of the land with a dish that combines tradition and finesse: <\/span><b>risotto with pumpkin, fresh porcini mushrooms and thyme<\/b><span style=\"font-weight: 400;\">, a tribute to seasonal cuisine and authenticity.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Our Chef wanted to reinterpret a great autumnal classic, choosing <\/span><b>pumpkin<\/b><span style=\"font-weight: 400;\">, the queen of sweetness and creaminess, to balance the <\/span><b>fresh porcini mushrooms from the Euganean Hills<\/b><span style=\"font-weight: 400;\"> and the <\/span><b>fragrant thyme<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<h3><b>Risotto with pumpkin, fresh porcini mushrooms and thyme<\/b><\/h3>\n<p><b>Recipe for 4 people<\/b><\/p>\n<p><b>Ingredients:<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">240 g Vialone Nano rice<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 pumpkin\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">250 g fresh porcini mushrooms<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Fresh thyme<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">50 g butter<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">50 g Parmesan cheese<\/span><\/li>\n<\/ul>\n<p><b>Method<\/b><b><br \/>\n<\/b><span style=\"font-weight: 400;\">Cut the pumpkin in half, remove the seeds and wrap it in foil together with a sprig of thyme, a pinch of salt and a drizzle of extra virgin olive oil. Bake it in the oven at 140\u00b0 for about half an hour. Cut one part into cubes and prepare a delicate vegetable broth with the remainder.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Pass the baked part through a sieve to obtain a smooth and fragrant pur\u00e9e.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-17272 size-full\" src=\"https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/11\/19-1.png\" alt=\"risotto pumpkin\" width=\"1920\" height=\"1080\" srcset=\"https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/11\/19-1.png 1920w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/11\/19-1-300x169.png 300w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/11\/19-1-1024x576.png 1024w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/11\/19-1-768x432.png 768w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/11\/19-1-1536x864.png 1536w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/11\/19-1-570x321.png 570w\" sizes=\"auto, (max-width: 1920px) 100vw, 1920px\" \/><\/p>\n<p><span style=\"font-weight: 400;\">Clean the porcini mushrooms and cut them into slices. Saut\u00e9 them in a pan with a little oil, a pinch of salt and a few thyme leaves.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Toast the rice in a pan, then cover it with the previously prepared hot broth. Add the pumpkin cubes and pur\u00e9e, stirring carefully until you achieve a creamy consistency.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Add the fried porcini mushrooms, then stir in the butter and Parmesan cheese.
