Our tagliolini with scallops and scampi invite you to slow down and savour a recipe executed to perfection.<\/p>\n<p class=\"p1\"><b>Recipe for 4 Guests<\/b><\/p>\n<p class=\"p1\"><b>Ingredients<\/b><\/p>\n<p class=\"p1\">240 g egg tagliolini<br \/>\n200 g asparagus (white and green)<br \/>\n4 fresh scallops<br \/>\n4 scampi<br \/>\nFresh marjoram<br \/>\nShallot, onion, tomato, brandy<\/p>\n<p class=\"p1\"><b>Method<\/b><\/p>\n<p class=\"p1\">Clean the asparagus and cut into small pieces. Saut\u00e9 with shallot to enhance their natural sweetness.<\/p>\n<p class=\"p1\">Prepare the bisque separately \u2014 a step requiring time and care. Brown onion and tomato, add the scampi and deglaze with brandy. Cover with salted water, allow to reduce, then strain. You will obtain an intense base capable of binding every element of the dish.<\/p>\n<p class=\"p1\">Sear the scallops briefly in extra virgin olive oil with salt and pepper. They should be lightly golden while remaining tender.<\/p>\n<p class=\"p1\">Cook the tagliolini in abundant salted water. Once ready, combine with asparagus, scallops and bisque.
