In his brilliant career, he has designed recipes that are the fruit of a long and at times hard period of maturation; and others that were the result of an instinctive idea, <strong>inspired by the passion of a moment experienced, a perfume, or a new ingredient<\/strong>.<\/p>\n<p>A <strong>passionate, instinctive and creative<\/strong> chef, who you can get to know better in this section\u2026and let yourself be won over by his creations.<\/p>\n<p>&nbsp;<\/p>\n<h3>Rabbit roll filled with mortadella and pistachios with pomegranate sauce<\/h3>\n<p>The idea for this dish was born during a <strong>gloomy autumnal evening<\/strong>, as the wind whistled through the shutters and the fire crackled in the fireplace.<\/p>\n<p>The white meat, which marries excellently with the aromatic perfumes and sweet honey and pomegranate sauce, creates a delicious contrast with the filling that contains bold flavours.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"img-fluid alignnone wp-image-829 size-full\" src=\"https:\/\/blog.termetritone.it\/wp-content\/uploads\/2018\/11\/melagrana-e-rotolo.jpg\" alt=\"melagrana-e-rotolo\" width=\"1920\" height=\"1080\" srcset=\"https:\/\/blog.termetritone.it\/wp-content\/uploads\/2018\/11\/melagrana-e-rotolo.jpg 1920w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2018\/11\/melagrana-e-rotolo-300x169.jpg 300w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2018\/11\/melagrana-e-rotolo-768x432.jpg 768w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2018\/11\/melagrana-e-rotolo-1024x576.jpg 1024w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2018\/11\/melagrana-e-rotolo-570x321.jpg 570w\" sizes=\"auto, (max-width: 1920px) 100vw, 1920px\" \/><\/p>\n<p><strong>INGREDIENTS FOR 8 PEOPLE<\/strong><\/p>\n<ul>\n<li>1 boned rabbit<\/li>\n<li>500g mortadella<\/li>\n<li>200g pistachios, toasted and chopped<\/li>\n<li>1 egg<\/li>\n<li>Bread crumbs<\/li>\n<li>Milk<\/li>\n<li>Thyme, salt and pepper<\/li>\n<\/ul>\n<p><strong>FOR THE SAUCE<\/strong><\/p>\n<ul>\n<li>2 pomegranates<\/li>\n<li>Extra virgin olive oil<\/li>\n<li>Salt, pepper<\/li>\n<li>Honey<\/li>\n<\/ul>\n<p><strong>PREPARATION<\/strong><\/p>\n<p>For the <strong>filling<\/strong>, grate the mortadella with the trimmings of the boned rabbit, and add salt and pepper. Add the egg and pistachios, the bread crumbs, a little milk to soften the mixture, and the thyme leaves.<\/p>\n<p>Work the mixture to create a soft and creamy mixture, then fill the rabbit.
