This is where the ros\u00e9 wines we present below come from.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><b>Alba Ros\u00e9 IGT, San Zibio Cellar<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Made with the raboso grape, which is characterized by its pale pink colour with orange reflections, this wine is special for its <\/span><b>\u00a0minerality. <\/b><span style=\"font-weight: 400;\">\u00a0It is a peculiarity that whets the appetite and renders it suitable for any meal and any occasion. It goes well with light dishes based on fish, meat and cheeses.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><b>Rosato Veneto IGT (Sparkling), Borin Winery<\/b><\/p>\n<p><span style=\"font-weight: 400;\">The adjective &#8220;<\/span><b> nice <\/b><span style=\"font-weight: 400;\">&#8221;\u00a0 was chosen by our sommelier to describe this wine, produced from Marzemine grapes. Its <\/span><b>\u00a0bubbles <\/b><span style=\"font-weight: 400;\">\u00a0are delicate compared to those of a prosecco or the classic Serprino of the Euganean Hills. However, it is an undemanding, summery wine that is perfect with the light dishes already described above.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><b>Ophrys Ros\u00e8 IGT, Il Fil\u00f2 delle Vigne Winery<\/b><\/p>\n<p><span style=\"font-weight: 400;\">This ros\u00e9 is a table wine made from Merlot grapes, structured but soft, ideal for <\/span><b>\u00a0demanding palates. <\/b><span style=\"font-weight: 400;\">\u00a0It is also produced by a small winery that uses <\/span><b>\u00a0rare grapes <\/b><span style=\"font-weight: 400;\">\u00a0which are safeguarded by the managing body in charge. This wine pairs well with tasty white meats, and refined fish and fried dishes.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><b>Monte Ricco Ros\u00e8 IGT 2017, Terra Felice Winery<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Our sommelier defines it as a \u201c<\/span><b> wine in a tuxedo: <\/b><span style=\"font-weight: 400;\">\u201d it is not a comfortable wine to taste. Produced with Pinot Noir grapes, it is characterized by <\/span><b>\u00a0metallic, ferrous and intense aromas. <\/b><span style=\"font-weight: 400;\">\u00a0Structured as it is, this wine goes well with elaborate dishes such as Venetian liver, roast, rabbit in fricassee and fish soup.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><b>Prosecco Ros\u00e8 DOC, Cantina dei Colli Euganei<\/b><\/p>\n<p><span style=\"font-weight: 400;\">A <\/span><b>\u00a0novelty <\/b><span style=\"font-weight: 400;\">\u00a0on the menu and on the Veneto landscape is this extra dry DOC Prosecco, produced from a single harvest from a 10-hectare vineyard that grows in a favourable position. Adjust to taste and add a pinch of chopped parsley.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Blanch the <\/span><b>\u00a0baby spinach leaves <\/b><span style=\"font-weight: 400;\">\u00a0very quickly in boiling, lightly salted water, drain and immerse the leaves in water and ice to keep their colour bright. After drying the spinach leaves, saut\u00e9 them in a pan with a drizzle of extra virgin olive oil and a pinch of salt.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Clean and dice the <\/span><b>\u00a0pumpkin. <\/b><span style=\"font-weight: 400;\">\u00a0Put the chopped shallot in a saucepan and simmer with the oil and a drop of water. Add the pumpkin cubes and a drop of vegetable broth and cook. Season with salt and then emulsify the pumpkin until a delicate, glossy cream is obtained.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Salt the <\/span><b>\u00a0amberjack fillet.<\/b><span style=\"font-weight: 400;\"> Heat a non-stick pan, add a drizzle of extra virgin olive oil, a few sprigs of thyme and the slices of fig, and start cooking the fish: first on the skin side and then on the pulp. This enables delicate cooking of the fillet and the qualities of the fish remain unaltered.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Once it&#8217;s ready, <\/span><b>\u00a0serve <\/b><span style=\"font-weight: 400;\">\u00a0the amberjack fillet with the baby spinach, the saut\u00e9ed pioppini, a few slices of caramelized fig, and the drops of Mantovana pumpkin.
