He himself tells us about it.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h3><b>A HISTORICAL AND RECENTLY EVOLVING VITICULTURE<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">\u201cToday restaurateurs and sommeliers can develop <\/span><b>\u00a0a complete wine list with only the labels of the Euganean Hills,&#8221;<\/b><span style=\"font-weight: 400;\"> explains Mirco. \u201cThis is because there are a variety of grapes, classic long-ageing methods, and niche wines\u201d.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Viticulture in the Euganean Hills has very ancient origins: several historical documents prove that the Venetian Doges loved these vineyards, even if at the time the wines produced were very different from what they are now. This terroir is not vast like other more famous surrounding areas (Valdobbiadene, Soave, Valpolicella) and, as explained by the Sommelier of the Hotel Tritone, it has a different qualitative history.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The peculiarities of this territory are unique: there are not only vineyards but also wooded areas, cherry trees, other fruit trees, and olive trees for the production of excellent extra virgin olive oil. There is respect for biodiversity here, and many local businesses work with <\/span><b>\u00a0biodynamic certification.\u00a0<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Furthermore, the<\/span><b>\u00a0soil <\/b><span style=\"font-weight: 400;\">\u00a0is highly diversified because the origin of the hills is both volcanic and submarine. Sauvignon, Tai, Garganega, Pinella, Serprino, White Moscato, and Yellow Moscato. The latter is called Fior d&#8217;Arancio in the production area of the Euganean Hills; it is the only one to have the DOCG designation.\u00a0 This wine is produced in dry, sweet sparkling and passito versions.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00a0There are also excellent <\/span><a href=\"https:\/\/blog.termetritone.it\/en\/territory\/rose-wines-from-the-euganean-hills-fine-labels-to-taste-at-the-hotel-tritone\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"font-weight: 400;\">ros\u00e9 wines<\/span><\/a><span style=\"font-weight: 400;\">,<\/span><span style=\"font-weight: 400;\"> which we have already discussed in this blog. <\/span><span style=\"font-weight: 400;\">\u00a0<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The producers in the area are all medium-sized or small businesses and are all family-run.
