Gr\u00e2ce \u00e0 cet \u00e9quilibre, nous obtenons une entr\u00e9e excellente, qui offre <\/span><b>\u00a0des sensations d\u00e9licieuses et profondes <\/b><span style=\"font-weight: 400;\">\u00a0au palais.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pour sa r\u00e9alisation, le Chef conseille de <\/span><b>\u00a0s\u00e9lectionner avec attention les mati\u00e8res premi\u00e8res <\/b><span style=\"font-weight: 400;\">, en privil\u00e9giant celles de haute qualit\u00e9, comme cela est fait dans les cuisines de l&rsquo;H\u00f4tel Tritone, o\u00f9 la recherche des ingr\u00e9dients d&rsquo;excellence est constante et fondamentale.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h3><b>P\u00e2tes fra\u00eeches de tagliolini avec coquilles Saint-Jacques, asperges, marjolaine et bisque de langoustines<\/b><\/h3>\n<h4><b>Ingr\u00e9dients pour 4 personnes<\/b><\/h4>\n<p><span style=\"font-weight: 400;\">250 g de p\u00e2tes fra\u00eeches de tagliolini<\/span><\/p>\n<p><span style=\"font-weight: 400;\">5 coquilles Saint-Jacques<\/span><\/p>\n<p><span style=\"font-weight: 400;\">4 langoustines<\/span><\/p>\n<p><span style=\"font-weight: 400;\">150 g d&rsquo;asperges vertes et blanches<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 \u00e9chalotes<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1\/2 verre de vin blanc<\/span><\/p>\n<p><span style=\"font-weight: 400;\">100 g de tomate datterino<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1\/2 verre de Brandy<\/span><\/p>\n<p><span style=\"font-weight: 400;\">une petite quantit\u00e9 d&rsquo;huile d&rsquo;olive<\/span><\/p>\n<p><span style=\"font-weight: 400;\">une petite quantit\u00e9 d&rsquo;huile d&rsquo;olive extra vierge<\/span><\/p>\n<p>&nbsp;<\/p>\n<h3><b>R\u00e9alisation<\/b><\/h3>\n<h4><b>Pr\u00e9paration de la bisque<\/b><\/h4>\n<p><span style=\"font-weight: 400;\">Nettoyer les langoustines et les couper en morceaux. Dans une casserole, faire dorer une \u00e9chalote avec un filet d&rsquo;huile d&rsquo;olive et ajouter les langoustines fra\u00eechement coup\u00e9es en les faisant bien griller. Ajouter le Brandy et le laisser s&rsquo;\u00e9vaporer. Apr\u00e8s avoir coup\u00e9 les tomates datterini en deux, les ajouter aux langoustines et laissez rissoler le tout, en ajoutant du sel et du poivre. Laisser cuire environ 15 minutes en ajoutant un verre d&rsquo;eau. Laisser r\u00e9duire l&rsquo;eau et en fin de cuisson mixer, filtrer le tout avec une passoire et r\u00e9duire encore jusqu&rsquo;\u00e0 consistance cr\u00e9meuse.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Blanchir les asperges \u00e0 l&rsquo;eau sal\u00e9e pendant 5 minutes : elles doivent cuire mais rester croquantes.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Rincer les coquilles Saint-Jacques et s\u00e9parer la partie orang\u00e9e de la blanche. Faire revenir l&rsquo;\u00e9chalote dans un peu d&rsquo;huile dans une po\u00eale et cuire la partie blanche durant quelques minutes en ajoutant le vin blanc.
