Il s&rsquo;agit d&rsquo;une zone pr\u00e9sentant des sols calcaires et min\u00e9raux qui donnent des produits de qualit\u00e9. En effet, depuis 10 ans, Sambin travaille, avec l&rsquo;aide de l\u2019\u0153nologue Guido Busatto, en r\u00e9gime <\/span><b>biologique <\/b><span style=\"font-weight: 400;\">et <\/span><b>biodynamique<\/b><span style=\"font-weight: 400;\"> pour cr\u00e9er des vins exceptionnels qui respectent la nature.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Les op\u00e9rations effectu\u00e9es dans les vignes sont autant que possible <\/span><b>manuelles<\/b><span style=\"font-weight: 400;\">, notamment parce qu\u2019il y a beaucoup de terrasses. Sambin utilise des engrais verts et d&rsquo;origine animale, a opt\u00e9 pour le cuivre et le soufre pour le soin de la vigne et les huiles essentielles pour son autod\u00e9fense, et il est attentif au pi\u00e9tinement du sol.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">La m\u00eame philosophie s\u2019applique dans la cave \u00e0 vin\u00a0: il utilise des <\/span><b>levures <\/b><span style=\"font-weight: 400;\">autochtones et s\u00e9lectionn\u00e9es, afin que le raisin puisse exprimer pleinement le caract\u00e8re du territoire.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Le domaine propose souvent des <strong>d\u00e9gustations \u00e0 l&rsquo;aveugle<\/strong><\/span><span style=\"font-weight: 400;\">\u00a0o\u00f9 les vins rouges produits par Sambin sont compar\u00e9s \u00e0 de c\u00e9l\u00e8bres bordeaux fran\u00e7ais. Le score des vins eugan\u00e9ens d\u00e9passe souvent celui de vins ayant une valeur jusqu\u2019\u00e0 4 fois sup\u00e9rieure.<\/span><\/p>\n<h3><b><i>Marcus 2017<\/i><\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Il s&rsquo;agit d\u2019un <\/span><b>m\u00e9lange bordelais<\/b><span style=\"font-weight: 400;\"> classique compos\u00e9 de cabernet sauvignon, de merlot et de cabernet franc. Dans le verre, le vin a une <\/span><b>couleur rouge rubis intense<\/b><span style=\"font-weight: 400;\">, presque imp\u00e9n\u00e9trable. Sa structure est somptueuse. Le tanin est tr\u00e8s pr\u00e9sent mais bien poli. La finale est balsamique et a une longue persistance aromatique et \u00e9l\u00e9gante.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">C\u2019est un vin qui aime le temps, et peut donc \u00eatre appr\u00e9ci\u00e9 apr\u00e8s de nombreuses ann\u00e9es.<\/span><\/p>\n<h3><b>Cave Tezza dans la Valpantena, V\u00e9rone<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Dans cette zone historique, trois cousins &#8211; entrepreneurs viticoles de troisi\u00e8me g\u00e9n\u00e9ration &#8211; dirigent la Cave Tezza. Ici, on produit le Valpolicella Ripasso, un vin ferme qui fait deux fermentations et qui est c\u00e9l\u00e8bre dans le monde entier.<\/span><\/p>\n<h3><b>Valpolicella Ripasso 2019<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Ce vin est \u00e9galement pr\u00e9sent dans les guides \u0153nologiques, avec une note<br \/>\n\u00e9lev\u00e9e. Le Ripasso est produit \u00e0 partir de trois \u00e0 cinq c\u00e9pages classiques : corvina, rondinella, molinara, corvinone et oseleta. Apr\u00e8s la r\u00e9colte a lieu la <\/span><b>premi\u00e8re fermentation<\/b><span style=\"font-weight: 400;\"> (entre septembre et octobre). En janvier, on fait tremper avec le valpolicella les raisins d\u2019amarone qui ont subi le passerillage, et c&rsquo;est ainsi que se produit la <\/span><b>deuxi\u00e8me fermentation<\/b><span style=\"font-weight: 400;\">, o\u00f9 le vin s\u2019enrichit du parfum des peaux.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Dans le verre, le vin est d&rsquo;un <\/span><b>rouge rubis intense<\/b><span style=\"font-weight: 400;\">. Les polyalcools donnent la consistance caract\u00e9ristique qui est obtenue par la deuxi\u00e8me fermentation. On sent la confiture de m\u00fbres, la confiture de cerises, le cassis, la violette paill\u00e9e, le poivre noir et balsamique.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Le <\/span><b>go\u00fbt <\/b><span style=\"font-weight: 400;\">est <\/span><b>doux<\/b><span style=\"font-weight: 400;\">, <\/span><b>chaud <\/b><span style=\"font-weight: 400;\">et <\/span><b>enveloppant<\/b><span style=\"font-weight: 400;\">.
