Pendant que le sucre fond, faites bouillir la cr\u00e8me s\u00e9par\u00e9ment.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Une fois le sucre fondu, versez-y la cr\u00e8me et faites bouillir le tout. Lorsque le m\u00e9lange de cr\u00e8me et de sucre a bien fondu, filtrez-le au tamis sur le chocolat au lait et laissez reposer 1 minute. Ajoutez ensuite le sel. Fouettez bien le m\u00e9lange. Lorsque la temp\u00e9rature atteint 40\u00b0, ajoutez le beurre ramolli. Dans un bol \u00e0 part, cassez les \u0153ufs et ajoutez le sucre, en fouettant bien jusqu\u2019\u00e0 ce que ce dernier fonde. Versez le m\u00e9lange de beurre et de chocolat dans le bol contenant les \u0153ufs et le sucre, et m\u00e9langez le tout jusqu\u2019\u00e0 ce que ce soit homog\u00e8ne. Ajoutez le reste des ingr\u00e9dients et laissez reposer au frigo avec du film plastique pendant 30 minutes.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Prenez le m\u00e9lange et placez-le dans une poche \u00e0 douille.
