Le croquant de la meringue s&rsquo;allie \u00e0 la douceur de la cr\u00e8me fouett\u00e9e et \u00e0 la saveur intense des framboises fra\u00eeches.<\/p>\n<p>La <strong>Meringue au c\u0153ur de framboise<\/strong> est id\u00e9ale pour terminer un d\u00e9jeuner sp\u00e9cial ou pour s&rsquo;accorder une pause sucr\u00e9e et gourmande lors d&rsquo;une chaude journ\u00e9e.<\/p>\n<p>Il s&rsquo;agit d&rsquo;une cr\u00e9ation de notre Chef p\u00e2tissier Federico, qui cr\u00e9e avec soin et passion des desserts \u00e9l\u00e9gants et riches en saveurs, destin\u00e9s \u00e0 surprendre et \u00e0 procurer un moment de pur plaisir.<\/p>\n<h3>MERINGUE AU C\u0152UR DE FRAMBOISE<\/h3>\n<h3>Ingr\u00e9dients<\/h3>\n<ul>\n<li>200 g de blanc d&rsquo;\u0153uf frais<\/li>\n<li>400 g de sucre semoule<\/li>\n<li>250 g de cr\u00e8me fra\u00eeche<\/li>\n<li>1 gousse de vanille naturelle<\/li>\n<li>30 g de sucre semoule<\/li>\n<li>Framboises fra\u00eeches<\/li>\n<li>Chocolat blanc pour la d\u00e9coration<\/li>\n<\/ul>\n<h3>Pr\u00e9paration<\/h3>\n<p>M\u00e9langer les blancs d&rsquo;\u0153ufs et le sucre dans un bol, m\u00e9langer \u00e0 la main et faire chauffer au micro-ondes jusqu&rsquo;\u00e0 ce que le m\u00e9lange atteigne 60\u00b0C. Transf\u00e9rer dans un batteur plan\u00e9taire et fouetter pendant environ 30 minutes (ou fouetter avec un batteur \u00e9lectrique pendant 30 minutes), jusqu&rsquo;\u00e0 ce que le m\u00e9lange soit brillant, ferme et bien a\u00e9r\u00e9.<br \/>\n\u00c0 l&rsquo;aide d&rsquo;une poche \u00e0 douille, former des c\u00f4nes dans les moules en silicone. Faire cuire dans un four statique \u00e0 84\u00b0C pendant toute la nuit. Laisser refroidir.<\/p>\n<p>Fouetter la cr\u00e8me avec le sucre et la vanille.
