En parcourant la Route des Vins, entre les stations thermales et les vues silencieuses sur les collines, chaque saveur devient une exp\u00e9rience \u00e0 part enti\u00e8re.<\/p>\n<p>\u00c0 l&rsquo;h\u00f4tel Tritone, ce r\u00e9cit prend \u00e9galement vie \u00e0 table. Notre chef Massimo a r\u00e9interpr\u00e9t\u00e9 une recette de la tradition v\u00e9nitienne avec respect et cr\u00e9ativit\u00e9, en valorisant les ingr\u00e9dients locaux et les techniques anciennes : c&rsquo;est ainsi que sont n\u00e9s nos bigoli al torchio avec sauce de viandes mixtes, un hommage au go\u00fbt authentique et \u00e0 l&rsquo;h\u00e9ritage gastronomique des collines.<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Bigoli al torchio avec sauce de la tradition v\u00e9nitienne<\/strong><\/h3>\n<p>Recette pour 2 personnes<\/p>\n<h4><strong>Ingr\u00e9dients<\/strong><\/h4>\n<ul>\n<li>180 g de bigoli al torchio<\/li>\n<li>60 g de viande de pintade hach\u00e9e<\/li>\n<li>60 g de viande de lapin hach\u00e9e<\/li>\n<li>60 g de viande de poulet hach\u00e9e (plus les os pour le bouillon)<\/li>\n<li>1 oignon blanc<\/li>\n<li>1 branche de romarin frais<\/li>\n<li>1\/2 verre de vin blanc sec<\/li>\n<li>Huile d&rsquo;olive vierge extra en quantit\u00e9 suffisante<\/li>\n<li>Sel et poivre \u00e0 volont\u00e9<\/li>\n<li>Bouillon de poulet (pr\u00e9par\u00e9 \u00e0 partir des os et des parties moins nobles du poulet)<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-16640 size-full\" src=\"https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/07\/ricetta-lug25_02fr.jpg\" alt=\"\" width=\"1920\" height=\"1080\" srcset=\"https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/07\/ricetta-lug25_02fr.jpg 1920w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/07\/ricetta-lug25_02fr-300x169.jpg 300w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/07\/ricetta-lug25_02fr-1024x576.jpg 1024w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/07\/ricetta-lug25_02fr-768x432.jpg 768w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/07\/ricetta-lug25_02fr-1536x864.jpg 1536w, https:\/\/blog.termetritone.it\/wp-content\/uploads\/2025\/07\/ricetta-lug25_02fr-570x321.jpg 570w\" sizes=\"auto, (max-width: 1920px) 100vw, 1920px\" \/><\/p>\n<h4><strong>Pr\u00e9paration<\/strong><\/h4>\n<p>Pr\u00e9parez le bouillon en faisant mijoter les os et les morceaux de poulet avec le c\u00e9leri, la carotte, l&rsquo;oignon et le poivre noir pendant au moins une heure. Filtrez et mettez de c\u00f4t\u00e9.<\/p>\n<p>Dans une casserole, pr\u00e9parez une base avec de l&rsquo;huile d&rsquo;olive vierge extra, de l&rsquo;oignon finement hach\u00e9 et du romarin. Faites doucement fondre l&rsquo;oignon, puis ajoutez les viandes hach\u00e9es de poulet, de lapin et de pintade. Faites bien dorer, puis d\u00e9glacez avec le vin blanc. En fin de cuisson, retirez la branche de romarin.<\/p>\n<p>Poursuivez la cuisson \u00e0 feu doux en arrosant avec quelques louches de bouillon chaud.
