Aucune d\u00e9cision n\u2019est jamais prise par un seul individu, mais par plusieurs figures professionnelles capables de <strong>mettre sur la table des connaissances et exp\u00e9riences vari\u00e9es<\/strong>.<\/p>\n<p>En travaillant c\u00f4te \u00e0 c\u00f4te, on a le pouvoir de cr\u00e9er une <strong>richesse<\/strong> multiple, porteuse d\u2019une force inestimable. Cette rencontre quotidienne autour de l\u2019une des tables de notre salle de restaurant r\u00e9unit le Directeur <strong>Walter Poli <\/strong>en personne, le Ma\u00eetre d\u2019h\u00f4tel <strong>Stefano Ferrari <\/strong>et le nouveau Chef de l\u2019H\u00f4tel Tritone : <strong>Massimo Fiocco<\/strong>.<\/p>\n<p>Afin de composer les tonalit\u00e9s gustatives de chaque exp\u00e9rience gourmande \u00e0 l\u2019H\u00f4tel, l\u2019\u00e9quipe <strong>s\u00e9lectionne minutieusement chaque ingr\u00e9dient<\/strong>. Le choix se porte ainsi sur des produits typiques de territoires sp\u00e9cifiques, \u00e9l\u00e9ments indispensables d\u2019une exp\u00e9rience gastronomique unique et raffin\u00e9e.<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Des produits d\u2019excellence : un voyage dans l\u2019Italie des saveurs<\/strong><\/h3>\n<p>La chaleur et les traditions de l\u2019Italie du Sud donnent vie \u00e0 des produits au go\u00fbt unique, appr\u00e9ci\u00e9s dans toute la p\u00e9ninsule et au-del\u00e0.<\/p>\n<p>Pour les <em>primi piatti<\/em> (plats \u00e0 base de f\u00e9culents servis avant le plat principal) de l\u2019H\u00f4tel Tritone, l\u2019\u00e9quipe ach\u00e8te les <strong>p\u00e2tes de l\u2019Antica Maccheroneria d\u2019Avellino, <\/strong>une fabrique de p\u00e2tes historique o\u00f9 l\u2019on utilise du bl\u00e9 dur 100% italien transform\u00e9 par des machines traditionnelles et o\u00f9 l\u2019on suit des recettes transmises de g\u00e9n\u00e9rations en g\u00e9n\u00e9rations. De m\u00eame, l\u2019\u00e9quipe s\u00e9lectionne les <strong>tomates<\/strong> et leurs d\u00e9riv\u00e9s aupr\u00e8s des meilleures exploitations de Campanie.<\/p>\n<p>En changeant radicalement de cadre, nous voici dans le Haut-Adige, o\u00f9 l\u2019\u00e9quipe choisit les yaourts de la <strong>cr\u00e8merie sociale Meran<\/strong>, produits exclusivement avec le lait provenant des verts p\u00e2turages de ce territoire.<\/p>\n<p>Notre groupe d\u2019explorateurs du go\u00fbt ne porte pas seulement son attention au-del\u00e0 des fronti\u00e8res r\u00e9gionales, mais examine aussi les productions locales pour d\u00e9nicher des tr\u00e9sors \u00e0 la hauteur de la cuisine de l\u2019H\u00f4tel. C\u2019est le cas de l\u2019<strong>huile <\/strong><strong>Frantoio di Cornoleda produite dans les monts Eugan\u00e9ens<\/strong>, et qui a remport\u00e9 de nombreux prix.<\/p>\n<p>Les Petites Dolomites vicentines abritent quant \u00e0 elles l\u2019antique source de la <strong>Fonte Margherita<\/strong>, d\u00e9couverte par un groupe de pharmaciens qui reconnurent ses qualit\u00e9s th\u00e9rapeutiques en 1845.<\/p>\n<p>Notre souci du d\u00e9tail ne s\u2019arr\u00eate pas aux mati\u00e8res premi\u00e8res, mais couvre aussi les produits choisis pour le petit d\u00e9jeuner ou les pauses \u00e0 toute heure de la journ\u00e9e, comme les jus et les <strong>boissons bio sans colorants et sans \u00e9dulcorants artificiels<\/strong>.
