L&rsquo;itin\u00e9raire que nous fait parcourir le <b>plat de poisson<\/b> que nous vous pr\u00e9sentons aujourd&rsquo;hui est sublime, car il touche trois \u00e9tapes aussi diff\u00e9rentes que raffin\u00e9es : les <b>trois consistances<\/b> du <b>saumon<\/b>. Il y a celle tendre et humide du poisson frais, l&rsquo;incontournable consistance aromatique du poisson marin\u00e9 et, pour finir, la texture cr\u00e9meuse du caviar. Pour enrichir le parcours, des <b>l\u00e9gumes<\/b> du potager et le parfum du <b>vin<\/b> des monts Eugan\u00e9ens, la destination id\u00e9ale pour conclure ce d\u00e9licieux tour qui nous a conduits des eaux imp\u00e9tueuses de la mer jusque dans l\u2019arri\u00e8re-pays de la V\u00e9n\u00e9tie.<\/p>\n<p class=\"p1\">Et c&rsquo;est justement l\u00e0 que nous restons, \u00e0 d\u00e9guster le vin que le <a href=\"https:\/\/blog.termetritone.it\/en\/hotel-life\/conversations-with-our-team-we-meet-mirco-our-sommelier\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span class=\"s1\">Sommelier de l&rsquo;H\u00f4tel Tritone<\/span><\/a> propose pour accompagner le saumon. La bouteille vient de la Cantina dei Colli Euganei, une coop\u00e9rative qui propose un <b>prosecco ros\u00e9, mill\u00e9sim\u00e9, extra-dry<\/b>, id\u00e9al pour ce plat.<\/p>\n<p>&nbsp;<\/p>\n<h3 class=\"p1\"><b>Comment d\u00e9cide-t-on de l&rsquo;accord mets-vin<\/b><\/h3>\n<p class=\"p1\">Notre Sommelier nous explique la d\u00e9marche : \u00ab Marier un vin \u00e0 un plat signifie aussi savoir <b>observer les caract\u00e9ristiques<\/b> de ce dernier. Le plat a une bonne sapidit\u00e9, il est agr\u00e9ablement onctueux, plut\u00f4t aromatis\u00e9 et caract\u00e9ris\u00e9 par une bonne persistance gustative\/olfactive. L&rsquo;id\u00e9al est donc un vin moelleux, l\u00e9g\u00e8rement sucr\u00e9, qui <b>compense la sapidit\u00e9 et la tr\u00e8s l\u00e9g\u00e8re amertume du saumon<\/b> pr\u00e9par\u00e9 par notre Chef. \u00bb<\/p>\n<p class=\"p1\">L&rsquo;onctuosit\u00e9 du poisson est donc contrebalanc\u00e9e par l&rsquo;acidit\u00e9 et par l&rsquo;effervescence du prosecco ros\u00e9. Les ar\u00f4mes du plat, qui persistent au niveau gustatif et olfactif, se marient \u00e0 merveille avec les caract\u00e9ristiques de ce vin p\u00e9tillant particulier, qui cr\u00e9e ainsi une<b> d\u00e9licieuse harmonie<\/b> dans l\u2019\u00e9quilibre d\u00e9j\u00e0 parfait de ce plat gastronomique<span class=\"s2\">.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h3 class=\"p1\"><b>La qualit\u00e9 de la Cantina Sociale dei Colli Euganei<\/b><\/h3>\n<p class=\"p1\">Enfin, tout comme le plat se veut un hommage aux monts Eugan\u00e9ens, le vin a \u00e9t\u00e9 choisi chez un producteur de ce territoire. La marinade consiste \u00e0 laisser mariner le saumon dans une solution de sel, de sucre et d\u2019ar\u00f4mes pendant 3 jours.<\/p>\n<p class=\"p1\">Nettoyer le filet de saumon en retirant la peau et les \u00e9ventuelles ar\u00eates. Faire chauffer une po\u00eale, y mettre de l&rsquo;huile, puis faire revenir le filet de saumon. Saler et poivrer en ayant soin de faire revenir le saumon de tous les c\u00f4t\u00e9s.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p1\">Cuire les pommes de terre pr\u00e9alablement d\u00e9coup\u00e9es en fines tranches \u00e0 la vapeur, puis les passer \u00e0 la po\u00eale avec un peu d\u2019huile.<\/p>\n<p class=\"p1\">Blanchir rapidement les blettes fra\u00eeches dans une po\u00eale avec un filet d\u2019huile en les assaisonnant.<\/p>\n<p class=\"p1\">Couper le saumon marin\u00e9 en tranches.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p1\">Prendre le saumon \u00e9chaud\u00e9 et poser dessus les pommes de terre et les blettes, ajouter le saumon marin\u00e9 et les \u0153ufs de saumon.
