Parmi les plats du restaurant de l\u2019H\u00f4tel Tritone qui remplissent pleinement cette fonction, on trouve la poitrine de pintade aux asperges, radicchio et framboises.\u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<h3><b>Recettes de V\u00e9n\u00e9tie : de la \u00ab cour \u00bb de campagne aux sentiers de montagne<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Les animaux de basse-cour font partie de la culture culinaire du Nord-Est de l&rsquo;Italie. Dans ce plat con\u00e7u par le chef de notre H\u00f4tel, la pintade se retrouve en compagnie de deux excellents l\u00e9gumes de V\u00e9n\u00e9tie : l&rsquo;<\/span><b>asperge<\/b><span style=\"font-weight: 400;\"> et le <\/span><b>radicchio<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">La modernit\u00e9, d&rsquo;autre part, est repr\u00e9sent\u00e9e par la fra\u00eecheur et l\u2019\u00e2pret\u00e9 de la <\/span><b>framboise<\/b><span style=\"font-weight: 400;\">, un fruit moins typique de la plaine, mais qu&rsquo;on trouve encore aujourd\u2019hui en abondance dans les Pr\u00e9alpes v\u00e9n\u00e8tes.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h3><b>Le vin des monts Eugan\u00e9ens, pour boucler la boucle<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Ce plat, que nous pourrions qualifier de \u00ab g\u00e9ographiquement pertinent \u00bb, m\u00e9rite un accompagnement digne de son lien avec le territoire. Notre sommelier Mirco a donc s\u00e9lectionn\u00e9 un vin des monts Eugan\u00e9ens : le <\/span><b>Carmenere Riserva 2018 de la cave Vignalta<\/b><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Une autre <\/span><b>touche de modernit\u00e9<\/b><span style=\"font-weight: 400;\"> se r\u00e9v\u00e8le donc dans cette recette : en effet, on associe habituellement \u00e0 la viande blanche des animaux de basse-cour les vins blancs. Mettez-les \u00e0 cuire dans une casserole o\u00f9 vous aurez fait revenir l\u2019\u00e9chalote dans le beurre. Mouillez avec le bouillon de l\u00e9gumes. Une fois la cuisson termin\u00e9e, mixez le tout jusqu\u2019\u00e0 obtenir une cr\u00e8me \u00e9paisse. Faites cuire \u00e0 feu vif la poitrine de pintade dans une po\u00eale et arrosez-la d&rsquo;un verre de vin blanc des monts Eugan\u00e9ens. Ensuite, mouillez avec le bouillon de l\u00e9gumes et assaisonnez avec le romarin, la sauge et le thym. Laissez cuire 15 minutes de plus en couvrant la po\u00eale, de mani\u00e8re \u00e0 faire ressortir toutes les saveurs.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Dans une casserole, portez \u00e0 \u00e9bullition 1 litre d\u2019eau, avec le vinaigre, le sel, le sucre, les framboises et le poivre noir en grains. Faites-y cuire le radicchio rouge coup\u00e9 en quartiers pendant quelques minutes.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u00c9talez la cr\u00e8me d\u2019asperges sur un plat. Coupez en tranches uniformes la poitrine de pintade et versez sa sauce dessus.
