Autumn flavours on your plate: risotto with pumpkin, fresh porcini mushrooms and thyme

When autumn dresses the Euganean Hills in its most intense colours, the kitchen becomes a refuge of scents and memories. The sweetness of the pumpkin, the scent of thyme and the unmistakable aroma of porcini mushrooms evokes the memories of the season, of walks in the woods and warm moments around the table. The Hotel Tritone is celebrating the essence of the land with a dish that combines tradition and finesse: risotto with pumpkin, fresh porcini mushrooms and thyme, a tribute to seasonal cuisine and authenticity.

Our Chef wanted to reinterpret a great autumnal classic, choosing pumpkin, the queen of sweetness and creaminess, to balance the fresh porcini mushrooms from the Euganean Hills and the fragrant thyme.

Risotto with pumpkin, fresh porcini mushrooms and thyme

Recipe for 4 people

Ingredients:

  • 240 g Vialone Nano rice
  • 1 pumpkin 
  • 250 g fresh porcini mushrooms
  • Fresh thyme
  • 50 g butter
  • 50 g Parmesan cheese

Method
Cut the pumpkin in half, remove the seeds and wrap it in foil together with a sprig of thyme, a pinch of salt and a drizzle of extra virgin olive oil. Bake it in the oven at 140° for about half an hour. Cut one part into cubes and prepare a delicate vegetable broth with the remainder.
Pass the baked part through a sieve to obtain a smooth and fragrant purée.

Clean the porcini mushrooms and cut them into slices. Sauté them in a pan with a little oil, a pinch of salt and a few thyme leaves.
Toast the rice in a pan, then cover it with the previously prepared hot broth. Add the pumpkin cubes and purée, stirring carefully until you achieve a creamy consistency.
Add the fried porcini mushrooms, then stir in the butter and Parmesan cheese. Finish with fresh thyme and a few slices of porcini mushrooms for garnish.
