
Meringue with a raspberry heart
A light, fresh dessert perfect for summer. The crunchiness of meringue combines with the sweetness of whipped cream and the intense flavour of fresh raspberries.
This meringue with a raspberry heart is ideal to end a special lunch or to treat yourself to a sweet and mouth-watering break on hot days.

MERINGUE WITH A RASPBERRY HEART
Ingredients:
- 200 g fresh egg white
- 400 g caster sugar
- 250 g fresh cream
- 1 natural vanilla pod
- 30 g caster sugar
- fresh raspberries
- white chocolate for decoration
How to prepare
Combine the egg whites and sugar in a bowl, mix by hand and heat in the microwave until it reaches 60°C. Transfer to a stand mixer and beat for about 30 minutes (or beat with an electric mixer for 30 minutes), until the mixture is shiny, firm and well aerated.
With the help of a piping bag, form cones in the silicone moulds. Bake in a static oven at 84°C overnight. Allow to cool.
Whip the cream with sugar and vanilla. Fill the meringues halfway with cream, insert three raspberries and top with a cream spike.
Decorate with white chocolate chips or curls for a final touch of elegance.
